Le Bon Ton is a New Orleans-inspired oyster saloon, smokehouse, cocktail bar and absinthe den in Melbourne's Collingwood. Think exposed brick walls, copper studded bar, velvet mustard chesterfields, chandeliers overhead and a fairy-light dappled courtyard.
